Pumpkin!

Cooking with Pumpkin Puree!
I made Pumpkin Oatmeal Chocolate Chip Cookies and Pumpkin Spice Cream Cheese
(Both pictured below)
They turned out super yummy! I am so excited for Fall to be here already, I am excited for the cool weather...but then I will want it to be warm and Summer again...never happy with the current season :)

Pumpkin Spiced Oatmeal Pecan Cookies
(I added chocolate chips and skipped the pecans)
  • 1 cup all purpose flour
  • 2 cups quick oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 2 tsp pumpkin pie spice
  • 2 tbsp unsalted butter, room temperature
  • 1/2 cup sugar
  • 1/2 cup unpacked brown sugar
  • 1 large egg
  • 6 tbsp canned pumpkin (not pumpkin pie filling)
  • 2 tsp vanilla extract
  • 3/4 cup chopped pecans
Directions:
Preheat oven to 350°; line two baking sheets with parchment paper or use a silpat.
In a medium bowl, whisk together flour, oats, baking powder, baking soda, salt, pumpkin spice and cinnamon. In a large bowl, with a mixer, cream together the butter and the sugars on medium speed.
Add the egg, followed by the pumpkin and vanilla extract.
Working by hand, stir in the flour mixture and the oats until just combined and no streaks of flour remain; stir in the pecans.
Drop 1 tablespoon of the dough at a time onto prepared baking sheets. Bake for about 10-12 minutes, or until cookies become light brown at the edges.
Cool on baking sheet for 3 or 4 minutes, then transfer to a wire rack to cool completely.

Pumpkin Spice Cream Cheese
  • 8 oz Philadelphia 1/3 fat cream cheese
  • 1/2 cup pureed pumpkin (canned is fine)
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 2 tbsp brown sugar
  • 1 tbsp agave nectar

Combine all the ingredients in a medium bowl and beat until smooth

Staples AGAIN!

So....This weekend Bo did pretty ok with the staples, he would lick them a little, but nothing too serious.  But then yesterday I was gone most of the day and he ended up chewing on his staples and
pulled 3 of the 4 staples half way out.  So we went to the vet again today!
Last time they took Bo out of the room to give him the staples and they gave him a numbing shot, this time they did it all right in the room, with no numbing shot.
I was sure glad that I made Brian take the day off to be there, cause I was a MESS!  I was just bawling!  The doctor looked up at me and saw me crying,
and turns to Bo and says to him "You did better than your Mom!"

Project Day

Today was project day at my house.  I am feeling quite accomplished!  Brian and I worked together and cleaned and defrosted the big freezer.  I went grocery shopping this morning and made a two week dinner plan. I made crab cheese wontons, crockpot orange chicken, and salad in a JAR!  (I vacuum sealed the mason jars, they are said to last for 7-10 days with no browning or wilting)

On Thursday night I made Bacon wraped Green chilis with cream cheese and mozzerella cheese filling.  The were delish!

Bo Got STAPLES

So...Last Friday, Bo and Brian were wrestling and Bo's pad on his fore arm snagged on the carpet and ripped about half way off!  Bo didn't even know anything had appened until he smelt the blood, and then we think that Bo thought he hurt Brian.  Bo didn't act any different or favor that leg even...
but he did keep licking it.  I looked at it on Monday and saw how big the tear was and told Brian we should take him in to the Vet,  both dogs were due for shots anyways, and they gave him 4 staples!

Writting

I keep wanting to start a journal, writting my secrets down in.  And I keep going back and forth on starting a new blog and keeping it privite...and just getting a notebook and start writting.  I also keep going  back and fourth between scrapbooking and blogging.

Right now I am not really doing any of these things that I want to be doing.

I need to stop 'dreaming' or 'wanting' to do things and I need to just DO IT!

Right Now

Right now:
  • I am teaching myself to knit, and am about 1/8 finished with a striped scarf
  • I am preparing to make more Jam - don't tell Brian, we have a surplus of jam still
  • I am learning that I am happier when my home is clean - took long enough
  • I am trying to develop particular habits - some are harder than others
Above all; Right Now I am in love with my husband! He is so sweet and generous to me (see last post!), he makes me laugh like no one else does, and I am not sure what I would do with out him.

It All Ends Here

Mom and I joined other faithful followers to the final installment of the Harry Potter Movies!  We were able to attend the midnight showing with some of Matt's close friends while he is away attending school at BYU-I.  Harry Potter 7 part 2 was fantastic! I was impressed with how they tried hard to stay true to the last book.  The character that still moves me is Snape.  (Spoiler) That they were able to depict the level of love that Severus held for Lily Potter was incredible and i am so glad they did that justice (in my opinion).

I was able to make our shirts, just with iron-on lettering and some apliques. I was able to attend a party before the movie where we made our own wands, and HP glasses.  also made were treats for all to take with us to enjoy at the movie; pumpkin pasties, chocolate covered cockroaches, and fizzing wizzbies.  Some of our group made thier Shirts with just sharpe markers and did it freehand.  Those turned out really cute, and they had some very creative ideas; Make love not Horcruxes, Horcruxes, gotta catch 'em all (like pokemon), Team Edward Harry,  I'm with muggle --->.

We had such a great time and I cannot wait for the DVD to be released!

Happy 5 years!

Well it has been 5 years now since we were Sealed in the Denver Temple. Brian would tell you that it feels like it has been 10 years :) We were able to celebrate all weekend long! Our celebration started on Thursday evening, Brian's friend from work had a few comp nights for Blackhawk so they invited us to join them. We stayed at the Fortune Valley Casino. We ate a ton at a buffet for dinner and then Brian and I just hung out in our hotel room and watched TV. Funny thing though, our toilet overflowed and created a lake right in front of our door and a little in the hallway, we had to call the front desk and they were nice enough to move us a few doors down so that they could clean up the mess created with out an audience. we felt really bad about creating such a mess. In the morning we ate breakfast at the hotel restaurant and then watched TV until check out time. Before we left Blackhawk for the day we were able to stop and have lunch at O'Brien's Hungry Bear Restaurant, Brian has known Kevin O'Brien for most of his adult life and is pretty close friends with him. O'Briens was so delicious! I got wings and fries! We will have to venture up there again soon! Then we went to the movies and saw Pirates of the Caribbean 4. It was great! Brian was sleepy through out the movie though. On Saturday we picked up our basket from Bountiful Baskets (Fruit and Veggies) and watched Harry Potter most of the day on TV. Saturday night we went to Sonic and got ice cream treats. YUM! Today I went to church with out Brian, we planted the garden - we are growing watermelons, cucumbers, peas, corn, tomatoes, and peppers. I bought some herbs to plant, I just haven't gotten around to it. We just finished teaching our neighbors across the street to play Michigan Rummy. It was such a good time! Happy Anniversary Brian!

What the Hail?

It hailed today, a bit scary. I was so worried about my tomato plants! They are safe though, so you can breathe easy :) I had to go out and lay a blanket over them to protect them, and while doing so I got pelted!

Boots vs Flip-flops

I hate wearing shoes! I do love me some flip-flops. Brian always wears his work boots. We are so different in our footwear, but we make it work for us!

Mother's Day!

I had such a wonderful Sunday! I went to church and was filled with the spirit. I then came home and cleaned and prepared my dishes for the BBQ Brian and I hosted. We were able to have my mom, my sister M, her boyfriend J, and her two kids K (who is 3.5 yrs) & K (who is 2 mths). It was so fun, and the weather was so nice we were able to spend the whole evening outside! We had great food and played fun card games:) K was able to play fetch with the dogs and also "water" our lawn, she ended up watering a tree most of the time-mostly the bark, but she had fun with it. She was all soaked when she was done. I am so greatful that we were able to spend that time together

"Like a Good Neighbor"

So funny, I was in the other room, and Brian was watching tv by himself, and I hear him sing along with the State Farm Insurance comercial, "Likea good neighbor, State farm is there".
(this Is the comercial where the clamiant see's their car damages and then they sing the jingle, and the state farm agent pops in like a genie to start the claim)

The Red Tating Shuttle

Published with Blogger-droid v1.6.7
I have been thinking a lot of my Grandma Burke lately, she taught me how to cross-stich, tat and tie a quilt. Her favorite color is red, I thought that was the reason all her tating shuttles were red, Amanda told me that she thought that they were all red because that was the only color they came in...we may never know if the were chosen for their color or if there was no other choice.
